Wonton Noodle Soup 馄饨汤面

Throughout my childhood, there was nothing more I looked forward to than the aroma of my grandparents’ homemade wontons. I always came downstairs to batches and batches of wontons being stored in the freezer and enjoyed a bowl of wonton noodle soup when I arrived home from school. This was what I always couldn’t wait to come home to, and it allowed me to appreciate family more; thus, I hope this brings you a similar warmth and joy as I experienced during my adolescence.



Ingredients

Yield: 1 serving

  • Wonton wrapper (6)

  • Scallions (3 stalks)

  • Minced pork (1 oz)

    • We purchased pork that had been already minced from H Mart

  • Your choice of noodles

  • We used IchiBan Soul Q-Noodles

  • Bok choy (2 stalks)

  • Salt

  • Soy sauce

  • Sesame oil

  • Water

Optional ingredients based on personal preference:

  • Oyster sauce

  • White pepper powder

  • 2 slices of ginger (secret ingredient!!!!)




Cooking Instructions
  1. Dice up the scallions and peel the Bok choy.

  2. Put two slices of ginger with a few scallions in a bowl. Fill it up with water and mix.

  3. Put your full yield of pork into a large bowl. Stir it with either a spoon or chopsticks. As you go along, add scallions, oyster sauce, soy sauce, your ginger water, sesame oil, white pepper, and a bit of salt. The quantities of the condiments, such as oyster sauce and white pepper, depend on your taste preferences, but put enough to coat and flavor the pork!

  4. Microwave a bit of the pork and taste test it for your preferences.

  5. Take a wonton wrapper and put a bit of your pork mixture in the middle of the wrapper. Seal the pork in; then dip one corner of the wonton wrapper into water and seal it with the other corner. The wonton wrapping process has been photographed.

  6. Allow the water to boil in two separate pots. Cook the noodles in one pot and the Bok choy in another.

  7. Cook the Bok choy for two minutes if you like your vegetables crunchy. If not, cook it for longer.

  8. Cook the noodles for 8 minutes-- however, the time the noodles are cooked depends on what noodles you purchase in order to pair with your wontons. Cook until your desired texture is attained.

  9. Take out your noodles with a strainer and put them into a bowl.

  10. Add a dash of sesame oil to your noodles so they don’t stick together.

  11. Then, fill up a pot with water and wait for it to boil. This will be to cook your wontons.

  12. Add a dash of salt, as this will be your flavoring for the soup.

  13. Put the wontons into the pot and stir with chopsticks so they don’t stick to the pot!

  14. Cook the wontons for 5-8 minutes. Cut one of them in half or poke it with a chopstick to make sure the meat is fully cooked!

  15. Add the wontons, your salt water, and the Bok choy into the bowl of noodles. Add scallions for flavoring as well as white pepper powder.

  16. Enjoy!


Notes
  • If you enjoy spices, you can always add hot sauce to your soup, or keep it on the side to dip your wontons into!

  • The soup also tastes great with cilantro, which we did not have when I cooked this dish :(
