Memil Noodles 메밀국수

Memil is the Korean word for buckwheat and Guksu is the Korean word for noodles. Memil Guksu is a cold noodle dish with sweet, savory, and tangy flavors. It is best paired with hot dumplings for a perfect blend of flavors and temperatures. This fast and easy recipe is sure to delight your taste buds!

Ingredients
Yield: 4 servings
Prep time: 15 minutes
Cooking time: 8 minutes
Radish [1/2 of a whole radish]
Green Onion [3-4 based on liking]
Buckwheat Noodles Soba [Four servings]
Dried Seaweed [1-2 whole sheets based on personal taste]
Cold Naengmyun (Korean cold noodle) broth [four packages of 340mL]
Soba Tsuyu (Dipping sauce for Cold Soba Noodle) [1/2 cup]

Cooking Instructions
Pour the broth packages into one big bowl
One of the packages can be frozen to make the dish colder
Pour ½ cup of Soba Tsuyu sauce into the broth
Chop the green onions into small pieces and place in a separate bowl
Using a large grater, grate ½ radish into a separate bowl
Cut the dried seaweed into fourths; then cut each fourth into thin strips
Unravel the noodle packaging
In a big pot of boiling water, place the noodles in a fanned motion so the noodles do not clump together on the ends
While the noodles are cooking, stir them with chopsticks so the noodles stay separated
Every so often, for a total of three times, when the pot looks as though it is about to boil over, pour cold water into the pot to settle the water
Let the noodles cook for about 7-8 minutes or until the noodles are fully cooked
Strain the noodles over the sink
Rinse with cold water to cool them, then, after a minute, rinse the noodles under cold water by hand
Then plate the noodles by picking up a small portion and wrapping the noodles around themselves
Assemble each bowl of noodles to each person’s liking. The noodles and broth go in, then place the radish, green onions, and seaweed to your liking. The fun is in refilling the noodles after each serving!
Notes
All ingredients can be found in an Asian supermarket, specifically for this recipe, in a Korean supermarket. Variations, such as boiled eggs, can be placed on the top according to your liking.
