Knife-Shaved Noodles with Tomato Egg Sauce 刀削面

Tomato and egg sauce has always been my all-time favorite sauce for noodles. This recipe is for a staple dish often found in the Chinese kitchen - tomato egg noodles - and uses simple ingredients. The chewy knife-shaved noodles are covered with sweet and sour sauce and garnished with green onion.


Ingredients

Yield: 2 servings


For the Noodles:

  • 150g flour

  • 1g Salt

  • 65g Water

For the Tomato Egg Sauce:

  • Olive oil

  • 1g Salt

  • 1g Green onion

  • 2 Eggs

  • 2 Tomatoes

  • 150ml Water

  • 2 teaspoons Light soy sauce

  • 1 teaspoon Dark soy sauce

  • 1 teaspoon Oyster sauce

  • 2g Sugar


Cooking Instructions
  1. Add the flour and salt to a large bowl. Gradually add water while stirring the ingredients to be fully mixed. Take the flour out and knead the dough on a kneading board or a chopping board till it is smooth. It may require some time (around 10 minutes or more) because the dough for knife-shave noodles is a bit stiff. Then let the dough rest for 20 minutes. In the meantime, you can prepare the sauce (Step 2-4).

  2. Cut the tomatoes into small pieces, the shape does not matter. Chop the green onions. Crack two eggs in a bowl, add a little bit of salt in it, and mix them together.

  3. Add some olive oil in a fry pan. After the oil is heated, pour the eggs and stir until they are cooked but still moist. Take the eggs out in a bowl for later use.

  4. Add a little olive oil and a bit of salt in the pan. Add the green onions; fry until they start changing color and you smell the aroma of them. Add the tomatoes and stir fry until the juice starts to come out. Then add 150ml of water and put the lid on to let them boil for about 2 minutes.

  5. After the dough is ready, knead it into a smooth oval shape. Now it is ready to be sliced. Boil some water in a pot and start slicing the dough into long, thin pieces from the top. Boil the noodles for about 5 minutes depending on the thickness of the noodles.

  6. After the tomatoes are fully boiled, add the eggs. Add 2 teaspoons of light soy sauce, 1 teaspoon of dark soy sauce, and 1-2 teaspoon of oyster sauce. Then fully mix the ingredients. Finally add about 2 grams of sugar before the sauce is ready.


Notes
  • Use a sharp knife if you do not have the special slicer for cutting knife-shaved noodles. I used a meat-cutting knife instead. There is usually leftover dough because it is hard to slice all the way to the bottom. For the leftover dough, you can slice them into small pieces using either scissors or a knife. I chose to make cut noodles with it. The tomato egg sauce can be used for almost any kind of noodles. If you do not want to make the knife-shaved noodles by yourself, you can pair the sauce with other kinds of noodles as well.
