Homemade chicken noodles 鸡肉面

Noodles have long been served as the main body of a traditional Chinese diet. It is the fan part of a meal. Noodles help people avoid a high energy and high fat diet, which is good for health reasons. This homemade chicken noodle is very easy to handle, and all the ingredients are very common in household kitchens. The chicken noodles provide you with warmth and coziness, especially on a winter morning! Cook it for your family to double the happiness!

Ingredients
Yield: 1 serving
Prep time: 5 minutes
Cooking time: 25-30 minutes
Green onions (depends on your personal preference)
One egg
Red chili
Salt
Ginger
Soy sauce (1 tsp)
Spicy sauce
Noodles (80g)
Chicken (50 g)
Cooking oil (1tsp)

Cooking Instructions
Gather all the ingredients and tools for cooking
Chop the chicken and mix it with 1g of salt in a bowl
Place the chicken into a steamer and steam it for 20 minutes
Cut green onions, ginger, and chili into small pieces for later use (the amount depends on your personal preference)
Boil water on high in a pot. Put 1g of salt and 80g of noodles into the boiling water. Stir noodles occasionally using chopsticks, so they do not stick together or stick to the pot.
After putting noodles into the pot, the water will stop boiling. Wait until the water starts to boil again and then add about 100 ml of water into the pot.
Add 100 ml of water for the second time after the water in the pot starts to boil again.
When the noodles are well cooked, put them into a bowl with some water from the pot. Take out the chicken from the steamer and add some chicken into the bowl. Add green onions, ginger, chili, spicy sauce, salt, soy sauce, and oil into the bowl, depending on your personal preference.
Cook one fried egg: add some oil into a wok. Then crack an egg in it once the oil has heated up. Add a little bit of salt to both sides of the egg. When it is done, put the fried egg on top of the noodle.

Notes
Usually, we use very thin noodles because the thinner they are, the more flavorful.
The amount of ingredients, such as red chili, spicy sauce, green onions, ginger, soy sauce, and salt are highly dependent on your personal preference.
We start with the cooking of a chicken because it takes longer than the other steps.
Remember to put salt in the water when cooking noodles because salt can help noodles become more al dente.
We do not recommend saving the leftovers because noodles stick together very easily, which has a negative effect on taste.
