Green Bean Braised Noodles 豆角焖面

This recipe is definitely older than I am. My parents had been cooking this stewed noodle before they had me – their second daughter. My assumption is that my mom was born with the recipe. With the passage of time, who knows how much fine-tuning she has had to make to the recipe to arrive at today’s perfection, which I have the pleasure of enjoying. Now it’s my turn to inherit my family’s secret recipe and share it with you.

Ingredients
Yield: 2 servings
Prep time: 20 minutes
Cooking time: 30 minutes
A bag of green beans
1 potato (Optional)
2 servings of dried noodles
2 servings of pork belly
3 cloves of garlic
3 – 4 millet peppers
Salt
Soy sauce
2 teaspoons of granulated sugar

Cooking Instructions
Slice up the pork belly into pieces that are 1 to 2 cm each
Wash the green beans thoroughly and then cut off their two ends
Cut the green beans into pieces around the length of your little finger
Cut potato into small rectangular shapes (Optional)
Mince the garlic
Pour a reasonable amount of oil into a cold pan and add the sliced pork belly, as well as the minced garlic
After the pork belly is well done, add in the chopped potato
When the potato turns a golden color, add in the chopped green beans
Add 3 teaspoons of soy sauce and 2 teaspoons of granulated sugar
Pour water into the pan, just covering all the ingredients
Gently lay the boiled noodles upon the stew and cover up the pan
Check the pan regularly (once every 3 to 5 minutes) to see how much broth is left
The dish is ready when all the broth has been absorbed by the braised noodle
Notes
This dish is usually enough for at least two people
The best alternative for store-bought noodles is hand-made noodles (however, unlike my mom, who makes this dish with fresh noodles, I haven’t mastered the technique that is used to make them)
Pork chops can be an alternative for pork belly
Flavor-wise, diced tomato can be added for a little variation
