When I was a child, I lived in the southern part of China. I disliked eating noodles very much. My parents seldom cooked noodles. They are not good at making them. Only when they are too busy to cook a proper rice meal with “fan” and “cai”, do they make noodles for lunch or dinner. The noodles they make are only freshwater noodles with some meat balls and green leafed vegetables. It was only when I tried the Dongtai Fish Soup Noodle when I was 10 that I started to realize how delicious noodles could be. At the moment you taste it, you will be woken up by its deliciousness on a lazy sleepy morning.
Ingredients
3kg crucian fish
3kg pork bone
5kg white flour or thin noodles
20g white soy sauce
200g dried small shrimp
25g white pepper powder
50g ginger
50g cooking wine
100g chives
400g garlic bulbs
1kg lard oil
11.8kg water
Cooking Instructions
Cut the ginger into thin slices; chop the chives into thin pieces. Clean up the crucian fish. Use fresh water to boil the pork bone until it is soft boiled. The fish has to be cleaned thoroughly; try not to leave any blood inside. The pork is boiled to get rid of the blood inside. We do this to make sure we have a very clean soup at the end of the cooking process.
Use the mixture of pork oil and vegetable oil to deep fry the fish. When the fish is cooked thoroughly, place it into the water. Add the ginger and garlic bulbs and boil. Wait until the water turns white and then put in 100g lard oil. Wait until the fish is fully boiled and filter all the solid content using a strainer only leaving the stock for the soup. This would be the first bowl of fish soup.
Use the pan to dry the fish and then use 200g lard oil to str-fry the fish. Then, place the fish into boiling water to make the second bowl of fish soup.
Mix the two bowls of fish soup together and place the cooked pork bone inside. Add some cooking wine and dried shrimp. The cooking wine is used to cancel out the raw smell.
Use clean water to boil the thin noodles. Wait until it is thoroughly cooked, and then add the cooked noodle into the fish soup.
Notes
If you are cooking at home, it might be inconvenient to make three bowls of fish soup in total. An easier way to make this dish is by making a bowl of pork soup after cleaning the pork, using boiling water. Then add the pork soup to the fried fish to make the fish soup. You can also omit the step of filtering out the solid content from the soup and just add noodles into the fish soup. However, be careful, crucian fish is a type of fresh-water fish. Unlike sea fish, these fish have lots of tiny fish bones.
