Vegetable Hakka Noodles

This dish is a fun, go- to favorite dish of mine. I have been addicted to noodles since I was a child, so when I discovered a noodle dish that had Indo-Chinese origins that contained spice, savory flavor, and noodles- I was hooked immediately. This dish works great as a light lunch or a satisfying dinner.








Ingredients

Yield: 6 servings

Prep time: 10 minutes

Cooking time: 20 minutes

  • 4 eggs

  • 1 bell pepper (color is your choice, I prefer green)

  • ½ of a red onion

  • 5 green onions

  • Pre- cut carrots, peas, and corn (1 cup)

  • 3 packets of Hakka Noodles

  • Salt

  • Pepper

  • Cayenne pepper powder

  • Cooking oil

  • 1 bag of store-bought cabbage

  • Sriracha sauce

  • Soy sauce

Optional Ingredients:

  • Green chili sauce

  • Rice vinegar

  • Ginger garlic paste

  • Crushed Red Pepper


Cooking Instructions
  1. Prepare a pot of water with salt, pepper, and your choice of cooking oil already in the water. Once the water is brought to a boil, add the 3 packets of Hakka noodles into the water. Cook until the noodles are tender, but make sure not to overcook the noodles as they will be stirred with the vegetables later.

  2. Prepare the onions and bell pepper by cutting them lengthwise. Prepare the green onions by chopping them into small pieces horizontally.

  3. In a separate, large pan, add in about 3 teaspoons of cooking oil and then add in the cup of carrots, peas, and corn and allow them to cook on medium heat.

  4. In the same pan, add in the onions and bell peppers with the carrots, peas, and corn. Allow them to cook on medium heat for 5 minutes.

  5. After the onions and bell peppers have finished cooking, add in the eggs to the same pan and scramble them as they cook.

  6. After the eggs have cooked, add the noodles into the pan with the onions, bell peppers, carrots, peas, carrots, and eggs. Stir all of them together then add in the bag of cabbage.

  7. Add in salt, pepper, and cayenne pepper powder to the noodles to taste. Allow the entire dish to cook for an additional 5 minutes on medium heat and then add in the spring onions to garnish. Add Sriracha to taste.


Notes
  • All ingredients and proportions are to our discretion. You can add in whichever vegetables and sauces you wish to; however, the ingredients I included are usually the basic version.
