Taiwanese Style Cold Noodles with Peanut & Sesame Sauce 麻酱面

You know that feeling when you walk into a new neighborhood and see everyone having the exact same thing? Whether that be the newest iPhone or air pod, there is a uniform acceptance. Well, imagine that but the neighborhood is in a Taiwanese taxi rest station with every taxi driver slurping down the same exact majiang noodles? Now that’s something I want my hands on.


Ingredients

Base:

  • approximately 120 grams of Chinese noodles

Sauce:

  • 2 teaspoons of sesame paste

  • 1 teaspoons of peanut butter

  • 1 teaspoon of low sodium soy sauce

  • ½ teaspoon of white cane sugar (optional)

  • 1 teaspoon of sesame oil

  • 1 clove of grated garlic

  • ½ teaspoon of rice vinegar

  • 2-3 teaspoons of cold water


Garnishes:

  • finely chopped green onions

  • Slices of carrots

  • Sprinkle of yellow and black sesame seeds


Cooking Instructions

Noodles:

  1. Heat up your bowl with water and sprinkle in some salt to flavor the noodles. Put the noodles in the bowl and let the water boil the noodles for approximately 6 minutes or when the noodles seem Al dente (you want your noodles to be at the consistency that you prefer just as when you take it out from the bowl as there will be no further cooking of your noodles after this step).   2. Wash your noodles in a strainer with cold water (this helps get rid of the starches stuck to the noodle) then place it in another bowl full of ice water (ice water will help maintain the temperature of the noodles as we want to serve this cold). Refer P2

Sauce:

  1. In a separate mixing bowl, add your equivalent portion of sesame paste, peanut butter, soy sauce, white sugar, sesame oil, rice vinegar, and 1 clove garlic all together. Refer P3

  2. Thoroughly mix your mixture until you see a homogenous paste (yes you will see a paste and not a sauce because the peanut butter will clump your sauce). Proceed by adding 1 teaspoon of water and mix to see if both the consistency and color have changed (you want a saucy consistency with an almost light caramel color for the sauce). Refer P4

  3. Assemble your dish in the order of: noodles, sauce, and garnish (the garnish is optional, but I find having a bit of color through carrots, sesame seeds, and green onions help liven the already delicious dish). Refer P5 + P6
