Spinach & Ricotta Ravioli

This is a great homemade ravioli recipe that tastes just like ravioli from an Italian restaurant. Although there are many steps in making the dish it is guaranteed to be extremely easy, and definitely worth it!


Ingredients

Yield: 4 servings (20 ravioli)


For the Ravioli Dough:

  • 3 eggs

  • 3 cups all-purpose flour

  • 1 teaspoon olive oil

  • 2 tablespoons water

  • ½ teaspoon salt

For the Ravioli Filling:

  • 1 container ricotta cheese (8 oz)

  • 1 bag of spinach (10 oz)

  • 1 bag of mozzarella (16 oz)


Cooking Instructions

For the Ravioli Dough:

  1. Mix flour in a large bowl

  2. Add in olive oil and salt with flour

  3. Put mixed flour in bowl on counter and make a large well in the center of flour

  4. Add three eggs in the center of the well

  5. Break the yolk of the eggs in the well and carefully whisk

  6. While combing the eggs and flour start adding in water to make the flour dough hard

  7. Knead the dough and make into a ball

  8. Cover dough with plastic wrap and put in fridge for 30 minutes

For the Spinach Ricotta Filling:

  1. Take stems off of spinach and cut into small pieces

  2. In a large bowl mix together ricotta cheese, cut spinach, and mozzarella together

How to fill the Ravioli:

  1. Once dough has been taken out of refrigerator flatten with a rolling pin

  2. When thin enough, roll filling in small circles and place evenly on dough leaving spaces in between

  3. Once dough has filling cut out sizes and cover the top with dough

  4. Use fingers to gently press dough and cover all edges

  5. Seal with edges of a fork

How to cook the Ravioli:

  1. Boil 6 to 8 quarts of water

  2. Once water is at a boil drop pieces of ravioli in

  3. Salt water and cook for 8-10 minutes

  4. Once ravioli is cooked drain water and add in sauce


Notes
  • Common olive oil works better than extra virgin or avocado oil. Also if gluten free flour is used make sure to add more water has it is harder to thin the dough out.
