Spaghetti with Bolognese Sauce and Goat Cheese

Sometimes the simplest, easiest recipes are the most rewarding! This classic Italian Bolognese sauce combined with spaghetti, goat cheese, and herbs offers the perfect combination of flavors, with ingredients most likely already in your home. Many variations are possible with this dish, so cater to your individual taste buds and make it your own!

Ingredients
Yield: 4 servings
Prep time: 5 minutes
Cooking time: 30 minutes
1 onion, sliced
1 garlic clove, pressed or diced
Olive oil, ½ tbsp
16 oz ground turkey or chicken
1 package gluten free lentil spaghetti
1 container (about 25 oz) of tomato basil pasta sauce
2 tbsp tomato paste
Dried thyme
Dried oregano
Goat cheese

Cooking Instructions
Coat large saucepan with olive oil on medium heat.
Add sliced onion and cook until it becomes translucent.
Add garlic. Wait 1-2 minutes.
Add ground turkey. Add pepper and salt to taste. Stir until ground turkey is almost fully cooked through.
Turn heat to medium low / low. Add 2 tbsp tomato paste and stir through.
Add entire container of tomato basil sauce and let simmer for 10-15 minutes.
While pasta sauce simmers, bring 8 cups of water to a boil in a separate saucepan. Add spaghetti and cook for 7-10 minutes uncovered or until desired firmness is reached. Strain spaghetti.
Add desired amount of spaghetti and pasta sauce to bowl. Add goat cheese on top and “Wendy pasta” can be served!
Notes
If there is leftover pasta sauce, it can be refrigerated or frozen for later use. It is best to make a fresh batch of pasta for each meal.
If an additional “kick” is desired, it makes for a delicious dish when you add red chili flakes on top of the pasta as an extra garnish. Fresh oregano may also serve as an excellent garnish.
In the above recipe, I used gluten free lentil spaghetti; however, any spaghetti or Italian noodle can be used!
Ground turkey or chicken can be replaced with any ground meat. The above recipe with ground lamb is very tasty as well.
Goat cheese can be substituted with parmesan cheese if desired.
