Organic Ravioli with Sautéed Chicken & Grape Tomatoes

My family and I strive to have healthy meals with organic ingredients. All of the ingredients in this recipe are USDA Certified Organic. Due to the current Pandemic, I purchased these goods at my local Whole Foods, but when the opportunity arises I cannot wait to shop at my local farmers market! Overall this Italian cuisine meal is a healthy balance of Carbs and Protein. It’s perfect for those looking to recover their body after a hard work out and preparing for another day of activities tomorrow!


Ingredients

Yield: 4 people

Preparation & Cooking Time: 35 minutes

Nutritional Information: Carbohydrates: 50 grams, Protein: 49 grams, Sugar: 5g, Calories: 1, 250 kcal

  • Organic Spinach & Cheese Ravioli

  • Organic Chicken & Mozzarella Ravioli

  • 5lb Organic Skinless Chicken Breast (diced in 1-inch cubes)

  • Salt and Fresh pepper

  • Organic Virgin Olive Oil

  • 4 Cups Organic Grape Tomatoes (halved)

  • 6 Cloves Garlic (smashed)

  • Fresh Organic basil (½ cup)

  • Italian Seasoning (Sprinkle)

  • Garlic Powder (Sprinkle)

  • Organic Parmesan Cheese (Shredded)



Cooking Instructions
  1. Ensure all ingredients are cleaned and rinsed properly

  2. Bring a large pot of water, with ¼ cup of salt and olive oil, to boil.

  3. Cut and season chicken generously with salt and pepper.

  4. Heat a large skillet on medium-high heat. When hot, drizzle with oil and add chicken. Cook about 3-4 minutes, until no longer pink.

  5. Cut tomatoes, basil, and crush garlic.

  6. Remove chicken and set aside.

  7. Drizzle the same pan with olive oil.

  8. Then put garlic in the same pan and sauté until golden brown (do not burn). Add tomatoes, basil, salt, and pepper and reduce heat to medium-low. Sauté about 4-5 minutes.

  9. Add pasta to boiling water and cook according to package directions. Reserve about 1/2 cup pasta water before draining.

  10. While pasta cooks, remove sautéd ingredients from pan and put in a separate bowl.

  11. When pasta is drained and cooked add to plate.

  12. Place the cooked chicken and sautéd tomatoes on the remaining space on the place.

  13. Sprinkle on Italian seasoning and garlic powder

  14. Add fresh uncut basil top with parmesan cheese.


Notes
  • Rinse the chicken, tomatoes, and basil one after another at the sink. But when preparing to cook cut the chicken and place it on the pan to cook. Do so before cutting the grape tomatoes, basil, and crushing the garlic. By the time you are done preparing these ingredients the chicken will be close to being done.
